Your role:
  • We are looking for a Production Manager to lead the production function for Brussels Unit.
  • You will report to the Unit Manager
  • You will manage the production team, including the Deputy Production Manager
Key responsibilities: 

Strategy and operations

  • Organize and plan production — quantities, volumes, work rhythm — in line with client specifications
  • Define and implement the production line's operational strategy, consistent with Group policy
  • Guarantee the smooth running of the production chain: manufacturing, methods, sourcing of products and equipment
  • Set the key performance indicators to evaluate production operations, and report on them to management
  • Anticipate critical events, identify resource needs and assign responsibilities for specific tasks, including deadlines and performance targets
  • Manage production to absorb last-minute changes from flight schedule modifications or cancellations
  • Run regular audits to sustain processes: gather reliable information, identify root causes and drive corrective action
  • Collaborate with menu planning, procurement and logistics to ensure smooth coordination and inventory control
  • Implement process improvements to increase efficiency, reduce waste and optimize costs
  • Guarantee Newrest's commitments to its clients are met
Communication and management
  • Communicate individual and collective cost, quality and delivery targets to the team, along with internal operating rules
  • Share daily results with the team and identify improvement areas together
  • Supervise the team and drive their skills development and efficiency
  • Formalize procedures and working documents and make them available to the team
  • Conduct performance reviews, recruitment and disciplinary interviews
  • Get the team to buy into the requirements of the production system
  • Alert the Unit Director to any major event within the teams (strike, accident, equipment failure, etc.)
  • Report to management on production performance indicators and identified improvement areas
  • Analyze and explain financial results, including production losses
Quality, hygiene, safety and security 
  • Own the HACCP follow-up and compliance with food hygiene standards
  • Enforce security and safety procedures
  • Ensure compliance with Group Hygiene & Quality policy and act on anomalies flagged by the Hygiene/Quality department
  • Track non-conformities related to food safety and hygiene, and drive corrective actions
  • Investigate and complete incident/accident documentation
  • Manage complaints: analyze, act, and follow up

Profile

  • 5+ years of experience at management level ideally in catering activities
  • Master culinary production techniques, food legislation, the cold chain, and hygiene and safety rules
  • Good knowledge of Word and Excel computer tools and will discover our production management ERP
  • Proven experience managing large, diverse kitchen/production teams under strict deadlines
  • Strong knowledge of HACCP and food safety standards (ISO, airline food safety protocols where applicable)
  • Fluent in English, second language is a plus (Frecnh)
  • Rigorous, organized, and have good interpersonal skills, good team spirit and good management of priorities and urgency.
