Mission
· Ensures that high quality food standard is maintained
· Train staff on hygiene basics and related HACCP standards that should be maintained
· Ensures that hygiene samples are sent on time to hygiene auditors and airline clients
· Ensures that suppliers are visited regularly and audited
· Receives incoming goods and verifies quality and also checks for expiry dates to ensure food safety
· Monitors projects to ensure that Hazard Analysis Critical Control Points (HACCP) and Standard Operating Procedures (SOP) are followed
· Ensures that all items stored are to the requires safety standards
· Monitoring of food production by checking temperatures and time records
· Ensures that all meals are weighed and documents are availed
· Ensures that all staff are knowledgeable about hygiene requirements and ensures that its implemented
· Monitors chlorination of water and works closely with maintenance department
· Monitoring operational procedures i.e. temperature controls
· Ensures that FEFO and stock rotation is followed
· Ensures that all first aid boxes are fully stocked to ensure proper usage
· Ensures that critical control points are clean and up to standard
· Ensures that airlines specifications are strictly observed by kitchen staff
